  • 4 large eggs
  • 1/2 cup mozzarella cheese, shredded
  • 1/4 cup milk
  • 1 small onion, finely chopped
  • 2 tbsp olive oil
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1/4 tsp paprika
  • Fresh parsley for garnish
