Today, variations include flavored chips and baked versions, reflecting a blend of traditional and modern culinary practices.

In a large bowl, add 2 cups of corn flour, 1 teaspoon of salt, 1 and 1/2 cups of water, 1 and 1/2 teaspoons of chili powder, and the juice from three limes.
Mix together with a spoon or fingers until combined.
Knead the mixture until a smooth, tight dough ball forms.
Wet hands with a little water and section off about a quarter of the dough.
Press the dough out onto a silicone mat or parchment paper.
Place a piece of parchment paper on top to prevent sticking.
Roll the dough out until thin and in a rectangular shape using a rolling pin.
Cut the edges to form a smooth rectangle, then cut the dough into triangular chip shapes using a pizza wheel or knife.
Remove excess dough back to the bowl.
Brush the top of the chips with a thin layer of olive oil.
Sprinkle a pinch of salt on top if desired.
Place the chips in a preheated oven at 350° F (180° C).
Bake for 10 minutes.
Remove the chips, turn them over, and bake again for another 5 to 8 minutes or until crisp and toasty.
