Heat 4 tablespoons of oil in a frying pan.

Add 1 chopped onion and sauté until golden.

Add 2 chopped potatoes (not too thick) to the pan.

Fry the potatoes for about 15 minutes until golden.

Remove the potatoes and onion mixture from the pan and let it cool.

In a bowl, beat the eggs and add 1/2 teaspoon red chili powder, 1/2 teaspoon dried coriander, 2-3 pinches of turmeric, salt to taste, and 1/2 teaspoon black pepper.

Mix the cooled potato-onion mixture into the egg mixture.

In the same pan, add a little oil and pour the egg-potato mixture into it.

Cook on medium heat for 5 minutes until the bottom is set.

To flip, place a plate over the pan and turn it upside down, then slide the omelet back into the pan.

Cover and cook on low flame for another 5-6 minutes until fully cooked.
