1

Cut off the wing tips of the chicken wings and lay them skin side down on a cutting board.

2

Season the chicken wings with a mix of salt, black pepper, and garlic powder in a ratio of 4 parts salt, 3 parts pepper, and 1 part garlic powder.

3

Lay the wings on a cooling rack inside an aluminum pan, skin side up, and stagger them for even cooking.

4

Preheat the smoker to 300°F.

5

While the wings are smoking, make the honey mustard sauce by mixing together ½ cup of mayonnaise, 2 tablespoons of honey, 2 tablespoons of yellow mustard, 1 tablespoon of honey Dijon mustard, and ½ tablespoon of lemon juice.

6

Double the honey mustard sauce recipe to ensure there is enough for the wings.

7

After 45 minutes of smoking, remove the wings and place them in a half pan with ½ stick of butter.

8

Return the wings to the smoker and cook until they reach an internal temperature of 180°F.

9

Once done, let the wings cool slightly, then dip them in the honey mustard sauce and place them back on the cooling rack.

10

Put the wings back in the smoker for an additional 5 minutes to set the glaze.
