6 bunches baby bok choy
1 tablespoon vegetable oil
chopped garlic
1 tablespoon soy sauce
2 tablespoons water
1 teaspoon sugar
1/2 teaspoon starch
fried shallots for garnish

Cut the baby bok choy lengthwise into quarters and wash thoroughly to remove sand or dirt.

Arrange the bok choy in a steaming pot.

Steam the bok choy for about 5 minutes.

While the bok choy is steaming, heat a small sauté pan over medium heat and add 1 tablespoon of vegetable oil.

Add chopped garlic to the pan and sauté until the garlic turns light brown.

Prepare the sauce by adding 1 tablespoon of soy sauce, 2 tablespoons of water, 1 teaspoon of sugar, and 1/2 teaspoon of starch to the pan.
