Vegetable oil is a budget-friendly option for marinating.
Go to the fishmonger and ask for salted herring fillets.
Soak the salted herring in water for at least 6 hours, preferably overnight, to remove excess salt.
Prepare the marinade by combining half a liter of white vinegar and half a liter of water in a saucepan.
Add sugar to the marinade, approximately one-third of the total liquid volume.
Heat the marinade gently to dissolve the sugar, stirring occasionally.
Prepare additional flavorings for the marinade, such as cinnamon, anise, and cloves.
For one variation, add dark beer to the marinade instead of water.
For another variation, add raspberry and strawberry to the marinade, along with marzipan syrup.
Once the sugar is dissolved, pour the marinade over the herring and let it cool down.
Refrigerate the marinated herring for at least 24 hours before serving.
