Remove from heat and stir in the soaked gelatin until fully dissolved.
Let the mixture cool slightly, then add lemon juice.
Whip egg whites in a separate bowl until stiff peaks form.
Gently fold the whipped egg whites into the cream mixture until well combined.
Pour the mixture into serving glasses or molds.
Chill in the refrigerator for at least 2 hours until set.
Serve chilled, optionally garnished with fresh berries or mint.
