Thoroughly rinse one bunch of Swiss chard in cold water.

Chop off the rough ends of the Swiss chard and separate the leaves from the stems.

Slice the stems into about half-inch pieces.

Stack the leaves evenly, roll them up, and chop into about half-inch slices.

Slice one carrot lengthwise into three planks, then chop those into small cubes.

Cut one large shallot into about 4 thick half moons.

Smash and peel three garlic cloves and chop them roughly.

In a large skillet on medium heat, add 2 tablespoons of olive oil.

Sauté the Swiss chard stems for a few seconds before mixing in the carrots.
