Green Rice

1 onion
10 Mushrooms
3 Tbsps olive oil
Salt
1 cup cilantro
3 cups Spinach
2 cloves garlic
2 cups Rice
3 cups water
2 tbsp nutritional yeasts

Chop the onion and mushrooms into small pieces.

Heat up a pot with olive oil.

Add the onions and mushrooms, sprinkle some salt, and sauté until golden brown.

Into a blender, add the spinach and cilantro along with 3 cups of water and 1 garlic clove. Blend until very smooth.

Wash the rice and add to the pot, add the green leaf mixture, season with salt and pepper and nutritional yeasts.

Mix and bring to a boil.

Cover the pot and reduce the heat to simmer.

Cook for 18 minutes, and leave it closed for 10 minutes more.

Serve and enjoy.
