This dish reflects Mexico's rich culinary heritage, where the use of local ingredients like cilantro and jalapeño is celebrated. In modern cuisine, variations may include additional vegetables or spices, making it a versatile favorite for family meals and festive gatherings.

Canola oil is more affordable while still providing a neutral flavor.
Add 1 cup hot water or chicken stock and 1 cup oat milk into a blender.
Deseed one whole green pepper (green bell pepper, poblano pepper, or anaheim pepper) and add it to the blender.
Peel 2 garlic cloves and add them into the blender along with a handful of cilantro.
Add 1.5 tablespoons of chicken bouillon and 1/4 teaspoon salt into the blender.
Blend the ingredients together for at least 30 seconds to create a smooth green mixture.
Dice 1 medium onion.
Set up a pot or deep frying pan on the stove and add 1.5 tablespoons of dairy-free butter.
Turn on the heat to medium and let the butter melt.
Once the butter is melted, add in the diced onions and sauté for about 1 minute.
Add in 1 cup of rice and toast it in the butter until it is golden, about 5 minutes.
When the rice is toasted and turning golden, pour in the green liquid from the blender.
Heat the mixture until it begins to simmer, then place the lid on top.
Turn the heat down to medium-low and simmer with the lid on for 20 minutes.
After 20 minutes, turn off the heat and let it stand for about 10 minutes.
