Canola oil is more affordable while still providing a neutral flavor.

1

Blend the poblanos, cilantro, parsley and garlic with a cup of water until smooth.

2

Pour the green liquid into a measuring cup and add enough water to complete 3 cups. Make sure that you do not count the foam as part of your liquid.

3

Wash the rice thoroughly inside a sieve until the water runs clear.

4

Heat some oil in a pan and add the drained rice. Fry it, mixing constantly, until it is dry and changes color a bit.

5

Add the liquid and season with salt to taste.

6

Bring the liquid to a rolling boil, cover the pot, reduce the heat and cook on low for 20 minutes.

7

Check your rice. If it is done, remove it from the heat and fluff it with a fork. Cover the pan and allow it to rest for 5 minutes.
