2 cups basmate rice
3½ cups water
1 chicken cube
½ tsp salt
little food coloring
500g chicken breast
1 onion
1 tsp garlic & ginger paste
1 to 2 tbsp tomato paste
1 nestle cream
½ tsp salt
a pinch of black pepper

Rinse the basmate rice under cold water until the water runs clear, then soak for 30 minutes.

In a pot, bring 3½ cups of water to a boil and add the chicken cube, stirring until dissolved.

Add the soaked rice and ½ tsp salt to the boiling water, then reduce to a simmer and cover, cooking until rice is tender and water is absorbed, about 15-20 minutes.

In a separate pan, heat oil and sauté chopped onion until translucent.

Add garlic & ginger paste and cook for another minute.

Stir in the tomato paste and cook for a couple of minutes until well combined.

In the same pan, add the cooked chicken breast (cooked separately) and season with a pinch of black pepper, mixing well.

Once the rice is cooked, fluff it with a fork and mix in the food coloring if desired, then combine with the chicken mixture.
