Green Rice

2 cups long-grain rice
4 cups vegetable broth
1 cup fresh cilantro leaves
1/2 cup fresh parsley leaves
1/4 cup green onions, chopped
2 cloves garlic, minced
1 jalapeño, seeded and chopped
1/2 tsp salt
1/2 tsp black pepper
1 tbsp olive oil
1 lime, juiced

Rinse the rice under cold water until the water runs clear, then drain.

In a blender, combine the cilantro, parsley, green onions, garlic, jalapeño, lime juice, and a splash of vegetable broth. Blend until smooth.

In a large pot, heat the olive oil over medium heat. Add the blended herb mixture and sauté for 2-3 minutes until fragrant.

Add the rinsed rice to the pot and stir to coat the rice with the herb mixture.

Pour in the remaining vegetable broth, salt, and black pepper. Bring to a boil.

Once boiling, reduce the heat to low, cover the pot, and simmer for 18-20 minutes or until the rice is cooked and the liquid is absorbed.

Remove from heat and let it sit, covered, for an additional 5 minutes.

Fluff the rice with a fork and serve warm.
