Green Rice

2 cups long grain rice
1/2 cup chopped onions
1 tsp garlic paste
1 cup spinach (tightly packed)
1/2 cup coriander (tightly packed)
3 spring onions
2 small bells pepper (or 1 large)
3 padrón pepper (or jalapeño)
2 cups chicken stock
salt to taste

Rinse the long grain rice under cold water until the water runs clear.

In a pot, heat some oil and sauté the chopped onions until translucent.

Add the garlic paste and cook for another minute.

Add the spinach, coriander, spring onions, and bell peppers, and sauté until the vegetables are softened.

Stir in the rinsed rice and mix well with the vegetables.

Pour in the chicken stock and season with salt to taste.

Bring to a boil, then reduce heat to low, cover, and simmer until the rice is cooked and the liquid is absorbed.
