Peel the red potatoes and cut them into equal-sized halves.
Boil the potatoes in salted water for 20-25 minutes until tender.
Cut the bacon into small bite-sized pieces.
Heat an iron skillet and add the diced bacon, cooking until crispy.
Slice half an onion thinly for caramelizing later.
Once the bacon is crispy, remove it from the skillet and place it on paper towels to drain.
Add the sliced onions to the bacon fat in the skillet to caramelize them.
In a bowl, add two quarters (1/2 cup) of unsalted butter to the drained potatoes.
Mash the potatoes with the butter until well combined, adding salt and black pepper to taste.
Taste the mashed potatoes and adjust seasoning as necessary, noting that the bacon adds salt.
Check on the caramelized onions and add the bacon back into the skillet to warm it up.
Plate the mashed potatoes, forming a well in the center.
Fill the well with the bacon and caramelized onions, garnishing with chopped parsley and chives.
