1/4 cup olive oil
2 tablespoons red wine vinegar
juice of 2 limes
1 teaspoon paprika
1 teaspoon garlic powder
1/2 teaspoon cumin
salt and pepper to taste
at least 1 teaspoon cayenne
1 tablespoon roasted garlic
1 can corn
1 can black beans
3 Roma tomatoes
1 red bell pepper
1 orange bell pepper
1 yellow bell pepper
2 jalapenos
cilantro to taste
1 small purple onion
1 cup Italian dressing

Make the Italian dressing by whisking together 1/4 cup olive oil, 2 tablespoons red wine vinegar, juice of 2 limes, 1 teaspoon paprika, 1 teaspoon garlic powder, 1/2 teaspoon cumin, salt and pepper to taste, and cayenne.

Add 1 tablespoon of roasted garlic to the dressing and whisk well.

Set the dressing aside.

In a large bowl, combine 1 can of drained corn and 1 can of rinsed black beans.

Chop and add 3 Roma tomatoes (about 1.5 cups), 1 red bell pepper, 1 orange bell pepper, and 1 yellow bell pepper to the bowl.

Chop and add 2 jalapenos to the bowl.

Add cilantro to taste and about half a cup of diced purple onion.

Pour the Italian dressing over the mixture and toss well.

Cover the bowl and refrigerate for at least an hour before serving.
