Soak peeled wheat in hot water overnight.
Drain the soaked wheat and cook it in a pot with enough water to cover it.
Stir occasionally to prevent sticking and cook until mushy, about 40-45 minutes.
In a separate pan, heat grapeseed oil and sauté chopped onions until browned.
Crush toasted walnuts using a rolling pin or food processor.
Once the onions are ready, mix in the crushed walnuts.
Add the cooked wheat to the onion and walnut mixture.
Season with salt, ground cumin, cayenne, and coriander, and cook for an additional 5-10 minutes while stirring.
