Turkey Enchiladas Casserole

Cook the red peppers and onion in a pan.

Add cubed turkey to the pan and cook briefly.

Remove the mixture from the pan.

In a casserole dish, add black olives and jalapenos.

Spread some enchilada sauce in the bottom of the casserole dish.

On each corn tortilla, spread some enchilada sauce.

Place some of the turkey filling on the tortilla and top it with grated cheese.

Close the tortillas tightly but gently, ensuring the enchilada sauce inside keeps them closed.

Place the filled tortillas in the casserole dish on top of the sauce.

Garnish the tortillas with the remaining enchilada sauce on top.

Sprinkle the rest of the grated cheese on top of the tortillas.

Cover the casserole dish with foil and bake for 15 minutes.

Remove the foil and bake for another 15 minutes.

When ready, garnish with fresh cilantro, tomatoes, and black olives.
