Add diced onion, celery, carrot, garlic, and sundried tomatoes to the pan along with a sprig of rosemary.

Stir in 1 tablespoon of tomato puree and cook everything for 5 to 8 minutes, stirring occasionally until the vegetables soften and their flavors combine.

If it dries out, add a splash of water to prevent sticking.

Rinse 300 g of split red lentils and add them to the pan; remove the sprig of rosemary.

Slowly pour in 700 mL of vegetable stock while stirring continuously to avoid lumps.

Add 200 mL of soy milk and let it cook for about 10 minutes, stirring frequently.

Once the lentils are tender and the mixture is thick and creamy, season with salt and pepper to taste.

Add a handful of baby spinach and 4-5 tablespoons of nutritional yeast; stir one last time until the spinach is completely wilted.
