500 g. natural pork belly (non-smoked) in strips of 1/2 an inch thickness
Salt (to sprinkle on the pork before frying)
1 kilo potatoes
30 g salted butter
2 tbsp. wheat flour
500 ml semi-skimmed cow's milk
0.5 tsp. sugar
1 large handful of parsley, chopped
salt & pepper to taste

Preheat the oven to 435 deg. F / 225 deg. C.

Place the pork belly strips on a baking grille tray and sprinkle with salt.

Put a normal baking tray below to catch the melted fat drippings.

Bake in the preheated oven for 30 minutes.

While the pork is baking, boil the potatoes until tender.

In a saucepan, melt the salted butter and add the wheat flour to make a roux.

Gradually whisk in the semi-skimmed cow's milk until smooth.

Add the sugar, chopped parsley, and season with salt and pepper to taste.
