1

Heat a large pot over medium high heat.

2

Add the sausage and olive oil, breaking it up with the back of a wooden spoon until almost cooked through, about 5 minutes.

3

Add in the onion and cook until turning translucent, about another 5 minutes, stirring occasionally.

4

Add in the garlic and cook until fragrant, about 30 seconds.

5

Add the sweet potatoes and chicken stock.

6

Add the bay leaf, salt, ground black pepper, paprika, cumin, chili powder, and coriander; stir.

7

Cook partially covered over medium heat until the sweet potatoes are tender, about 10 to 15 minutes.

8

Remove the bay leaf and add in the kale; continue to cook over medium heat for 5 minutes until the kale is tender.

9

Add kidney beans and cook for 5 minutes longer.

10

Check the doneness of the sweet potatoes by poking with a knife or fork; when the knife runs through easily, the potatoes are done.

11

Turn off heat and taste for salt and pepper, adding more if necessary.

12

Serve warm, topped with freshly chopped parsley or grated Parmesan cheese.
