1 egg, beaten
1 cup shredded carrots
2 tbsp ketchup
1 tsp finely minced or grated ginger
1 tsp soy sauce
1 tsp hot sauce
3 cups long-grain rice, cooked & cooled
1 tsp sesame oil or chili-infused oil
2 tbsp cashew nuts, roasted & roughly chopped
Salt and ground black pepper to taste
¼ tsp green onions, chopped
