Sift 3/4 cup all-purpose flour into a bowl.
Add 2 teaspoons baking powder to the sifted flour and mix.
Chop 1/2 cup walnuts into smaller pieces and set aside.
Add 1/3 cup chocolate chips and 1/3 cup raisins to the chopped walnuts.
Brush a long loaf pan with unsalted butter and sprinkle with flour, shaking out excess flour.
Preheat the oven to 350°F (180°C).
In a mixer with a whisk attachment, add 6 egg whites and mix on high speed until soft peaks form.
Gradually add 1 and 1/4 cups powdered sugar while mixing at a lower speed to avoid a mess.
Once the egg whites are at soft peaks, add the sifted flour mixture, 2 tablespoons of rum (or water), and 2 tablespoons of oil, mixing slowly to avoid deflating the egg whites.
Gently fold in the walnut, chocolate chip, and raisin mixture using a spatula.
Transfer the batter into the prepared loaf pan, leveling it out with a spatula.
Bake in the preheated oven for about 28 minutes, checking doneness with a skewer.
Let the cake cool in the pan for about 5 minutes before transferring to a cooling rack.
