1/4 cup vinegar
1 tbsp salt
3 tbsp gram flour
1 tbsp corn flour
1/2 tsp yellow chili powder
1/4 tsp carom seeds
1/4 tsp salt

1 tbsp ginger-garlic water
1/2 tsp red chili powder
1 tbsp chaat masala powder
1/2 tsp mix spice powder
1/2 tsp cumin powder
1 tbsp Amchur powder
1/2 tsp yellow chili powder
1/4 tsp salt

Add 2 cups of water and 1/4 cup of vinegar to a bowl, then add 1 tbsp of salt and mix well.

Soak the chicken wings in the mixture for 20 minutes to clean them.

In a bowl, mix 3 tbsp of gram flour, 1 tbsp of corn flour, 1/2 tsp of yellow chili powder, 1/4 tsp of carom seeds, and 1/4 tsp of salt.

Add a little water to the flour mixture to make a thick batter and mix well.

To the cleaned chicken wings, add 1/4 tsp of salt, 1 tbsp of ginger-garlic water, 1/2 tsp of red chili powder, 1 tbsp of chaat masala, 1/2 tsp of mix spice powder, and 1/2 tsp of cumin powder.

Add the prepared batter to the chicken wings and mix well.

Heat oil until hot but not smoking, then drop in 5 to 6 pieces of chicken wings to fry for 2 to 3 minutes on high flame for half frying.

Remove the half-fried wings and let them cool completely.

Heat the oil again until it is smoky, then drop in the cooled chicken wings and fry for another 2 to 3 minutes until crispy.

In a bowl, mix 1 tbsp of Amchur powder, 1/2 tsp of yellow chili powder, 1/4 tsp of salt, and a little water to make a chutney, then add lemon juice and mix.

Toss the fried chicken wings in chaat masala to taste before serving.
