Soak 2 cups of split peas overnight or for 1-2 hours in boiling water.
Grind soaked split peas in a food processor with about 1/2 cup of water until very fine, scraping down the edges as needed.
Reserve 1 cup of the ground split peas for the gravy and set aside.
In a mortar and pestle, grind garlic cloves and 2 weary weary peppers into a fine paste.
In a bowl, mix 3 cups of ground split peas with salt, turmeric, and the garlic-pepper paste.
Add baking powder and all-purpose flour to the split pea mixture, adjusting flour based on the water used during grinding to achieve a thick batter.
Heat vegetable oil in a heavy bottom pot over medium to medium-high heat.
Shape polari batter into rough balls and drop them into the hot oil.
Fry until golden brown, ensuring even cooking by moving them around in the oil.
Transfer fried polari to a plate lined with paper towels to absorb excess oil.
