Grilled Chicken Caesar Salad

Cultural Context

The Caesar salad originated in Tijuana, Mexico, in the 1920s, attributed to restaurateur Caesar Cardini. It quickly became a favorite in the United States, celebrated for its rich flavors and creamy dressing. Today, variations abound, with grilled chicken being a popular addition, making it a hearty meal option enjoyed in restaurants and homes alike.

USUSmain
4 servings
Servings4
1 baguette or sourdough bread
olive oil
SPG (salt, pepper, garlic powder)
3/4 cup olive oil
juice of 1 lemon
1 tablespoon dijon mustard
1 tablespoon worcestershire sauce
1 large clove garlic
1/4 cup shredded parmesan cheese
pinch of salt
crushed croutons
chicken breast
salt
pepper
romaine lettuce
1

Rip the baguette in half and then take pieces to make croutons, deciding the size you want.

2

Drizzle olive oil over the bread pieces and sprinkle with SPG (salt, pepper, garlic powder).

3

Spread the croutons evenly on a baking sheet and place them in a 400°F oven for about 10 minutes, checking them periodically.

4

In a container, combine 3/4 cup olive oil, juice of one lemon (removing seeds), 1 tablespoon dijon mustard, 1 tablespoon worcestershire sauce, 1 large clove of garlic, and 1/4 cup shredded parmesan cheese. Stir to combine.

5

Add a pinch of salt and a couple tablespoons of crushed croutons to the dressing mixture, then shake to combine.

6

Check the croutons in the oven to ensure they are crispy, as soggy croutons will ruin the salad.

7

Flatten the chicken breast in a bag, using some of the dressing oil to prevent tearing and add flavor.

8

Season the chicken with salt and pepper, placing the smooth side down first in a hot pan to sear.

9

Cook the chicken until done, about a few minutes on each side, checking for color and doneness.

10

Prepare the romaine by removing the outer leaves and chopping the remaining leaves.
