Boil 6 eggs for about 6.5 minutes for a medium to soft boil.
Place boiled eggs in an ice bath to stop the cooking process and cool them down.
Peel the eggs, using a method of cracking both ends and blowing the egg out if desired.
In a bowl, crumble 1 pound of pork sausage and mix in 3/4 cup of finely diced green onion.
Divide the sausage mixture into 6 equal parts.
Flatten each portion of sausage mixture thinly to ensure even cooking.
Make sure the boiled eggs are dry before wrapping them with sausage.
Wet hands with cold water to prevent sausage from sticking while wrapping.
Wrap the sausage around each egg tightly, ensuring it's fully covered.
Prepare an egg wash by mixing 1 egg with 1 tablespoon of cold water.
Set up a station with 1 cup of all-purpose flour and panko breadcrumbs mixed with 1 teaspoon of dried mustard, 1 teaspoon of smoked paprika, salt, and pepper to taste.
Roll each sausage-wrapped egg in flour, then dip it in the egg wash, and finally coat it with the panko mixture, pressing gently to adhere.
Heat canola oil in a deep fryer to about 350°F (175°C).
Carefully drop the coated eggs into the hot oil, ensuring not to overcrowd the fryer.
Fry the eggs for about 4 to 5 minutes until they are a deep dark golden brown, rolling them around occasionally to ensure even cooking.
Remove the eggs from the oil and drain on paper towels.
Cut one open to check that the sausage is cooked through and the egg is at the desired doneness.
