Boil a pot of water and slowly add 2 tablespoons of baking soda, then 2 tablespoons of white vinegar.
Turn the Granny Smith apples in the boiling water for 10 seconds using a slotted spoon, then quickly remove them to avoid cooking.
Scrub the waxy outer layer of the apples with a towel and place them in an ice bath to stop the cooking process.
Allow the apples to soak in the ice bath for 30 minutes, then store them in the fridge overnight or for 10-12 hours.
Wipe off the sap and any remaining residue from the apples with a paper towel before slicing.
Slice the apples into wedges using a preferred apple slicer, ensuring to remove the core efficiently.
To prevent browning, brush the apple slices with fresh lemon juice using a pastry brush.
Insert 6-inch wooden skewers into the apple slices without puncturing the flesh.
Dab off any excess liquid from the apple slices with a paper towel before dipping them into the candy mixture.
Place the apple slices on a sheet of parchment paper or silicone mat in the freezer for 30 minutes before cooking the candy mixture.
In a pot, combine 4 cups of granulated sugar and 1 cup of powdered corn syrup with 1.5 cups of bottled water, stirring until well combined to eliminate clumps.
Clip a candy thermometer onto the pot and bring the mixture to medium heat, wiping the edges with a damp brush to prevent crystallization.
Cook the mixture until it reaches 300°F (hard crack stage), being careful not to stir once it starts boiling.
Once at 300°F, remove from heat and add flavoring of choice, stirring gently and waiting for bubbles to settle.
Transfer the chilled apple slices to a clean, dry sheet of parchment or silicone mat before dipping.
Tilt the pot and swirl the apple slices into the candy mixture for a quick rotation, ensuring even coating without staying in too long.
Allow excess candy to drip off and wipe the bottom of the apple on the edge of the pot before freezing for at least 40 minutes to firm up.
