Incorporate cold butter into flour using a high-speed blender in two batches.
Add 1 cup of flour, half of the butter, 1 tablespoon of baking powder, and half of the salt to the blender and pulse until sandy texture.
Make a well in the dry ingredients and pour in 1 cup of cold buttermilk and drizzle 2 teaspoons of honey on top.
Fold the mixture together with a spatula until just combined and shaggy.
Turn the dough onto a floured surface and knead a couple of times.
Roll out the dough to about 0.75 inches thick.
Cut out biscuits using a 3-inch biscuit cutter and place them on a baking sheet lined with parchment paper.
Brush the tops of the biscuits with buttermilk.
Bake in a preheated oven at 425°F for 15 to 20 minutes until golden brown.
