Ham and Potatoes au Gratin

Cut the ham steak into little cubes, removing the bone and fat.
Shred the Swiss cheese using a food processor or chop it by hand.
Chop 1 to 1.5 cups of onions.
Slice the russet potatoes using a mandolin into about an eighth-inch cuts, or by hand if you don't have a mandolin.
Melt 2 tablespoons of butter in a skillet over medium heat.
Add 16 ounces of sliced mushrooms to the skillet and cook until they start to release their liquid.
Season the mushrooms with salt and black pepper.
Add 1/4 cup of all-purpose flour to the mushrooms and stir for 3-4 minutes to cook out the flour taste.
Pour in 1.5 cups of chicken stock and stir until combined.
Add 1/2 cup of heavy cream and stir until the sauce thickens, about 4-5 minutes.
Season the sauce with an additional 1/2 teaspoon of salt, 1/2 teaspoon of black pepper, and 1 teaspoon of Worcestershire sauce.
Layer the sliced potatoes in the bottom of the slow cooker.
Add a layer of cubed ham on top of the potatoes.
Sprinkle a layer of chopped onions over the ham.
Add a layer of shredded Swiss cheese on top of the onions.
Repeat the layering process until the ingredients are used up, leaving about an inch of space at the top of the slow cooker.
