Instructions

  1. 1In a mixing bowl, combine the flour, sugar, baking powder, baking soda, and salt.
  2. 2In another bowl, whisk together the buttermilk, egg, and melted butter until well combined.
  3. 3Pour the wet ingredients into the dry ingredients and stir until just combined; do not overmix.
  4. 4Fold in the chopped bacon into the batter.
  5. 5Heat a non-stick skillet or griddle over medium heat and lightly grease it with butter or oil.
  6. 6Pour 1/4 cup of batter onto the skillet for each pancake. Cook until bubbles form on the surface, about 2-3 minutes.
