In a large bowl, combine flour, salt, and sugar, and whisk together.
Crack in 2 eggs and add 1/2 cup of milk, setting the rest aside.
Whisk the mixture until smooth; it should be thick.
Gradually add the remaining milk, about 1/2 cup at a time, whisking until smooth after each addition.
Add in 2 tablespoons of melted butter and 1 teaspoon of vanilla if making sweet crepes.
Cover the batter with plastic wrap, ensuring it touches the batter, and refrigerate for 4 to 60 minutes.
Prepare a 1/3 cup measuring cup and heat a pan on medium-high heat.
Brush a little butter in the pan with a silicone brush.
Pour 1/3 cup of batter on one side of the pan and swirl to create a thin layer.
Cook for 30 seconds to 1 minute until the batter sets and the sides start to release from the pan.
Gently flip the crepe and cook for another 30 seconds before removing it from the pan.
