Salvadorian Turkey Sandwiches

Prepare the ingredients: turkey, chicken bouillon, mustard, apple vinegar, garlic cloves, soy sauce, mayonnaise, radish, cucumber, tomato, watercress, bolillos, California chili, celery, onion, carrots, potato.
Make the dressing by mixing mustard, soy sauce, apple vinegar, mayonnaise, and smashed garlic cloves. Whisk until combined and set aside.
Coat the turkey pieces with the dressing on both sides and cover with foil.
Place the turkey in the oven at 350°F for 2 hours.
After 2 hours, prepare a pot with water, garlic cloves, bay leaves, and chicken bouillon, and cook on medium-low heat for 30 minutes.
While the broth is cooking, peel and slice the potatoes and carrots, and soak the potatoes in water to prevent browning.
Cut the cucumber, leaving some skin on, and slice the radish and tomato thinly using a mandolin for even thickness.
Rinse the watercress and set aside.
Prepare the sauce by blending California chili, garlic cloves, half an onion, and the broth, then strain to remove seeds and skin.
After 2 hours, remove the foil from the turkey and let it cook for an additional hour until browned and crispy.
Add the prepared veggies to the turkey and cover with sauce, then cover with foil and return to the oven for another hour.
After an hour, check that the turkey is tender and falling apart, then prepare the tortas by wetting the bolillos with sauce and adding the veggies and turkey inside.
