Rose Jam

Cultural Context

Originating from Armenia, Rose Jam is a cherished delicacy made from fragrant rose petals, celebrated for its sweet, floral flavor. Traditionally enjoyed with bread or as a dessert topping, it symbolizes love and beauty in Armenian culture. Today, it has gained popularity beyond Armenia, inspiring variations across the Middle East and South Asia, where it is often used in sweets and beverages.

🥗Healthier: dried rose petals

💰Cheaper: edible flower mix

Dried petals are easier to store and use.

1

Pick the petals off the damask rose bush or clip the whole bud and remove the petals, discarding the buds.

2

Wash the petals in a large colander to remove any extra pollen or debris.

3

Weigh the petals to determine the amount of sugar needed, which is about three times the amount of petals.

4

Add the petals to a food processor and blend in batches, adding citric acid gradually until reaching 3 teaspoons.

5

In a large pot, bring 4 cups of water to a boil.

6

Once boiling, add the blended petals and simmer on medium heat for about 20 minutes.

7

Gradually add in the sugar in batches, stirring occasionally to ensure it dissolves evenly.

8

Bring the mixture to a boil and test a teaspoon of jam on a white plate to check the texture.

9

If the jam is too thin, let it simmer longer until the desired texture is reached.

10

Let the jam cool completely, optionally submerging the pot in an ice bath to speed up cooling.

11

Fill the cooled jam into mason jars for storage.
