Preheat the oven to 200°C (fan).
Preheat the baking sheet in the oven.
Measure out gluten-free self-raising flour, baking powder, and xanthan gum into a mixing bowl.
Chop cold butter into small pieces and add to the flour mixture.
Rub the butter into the flour mixture with fingertips until it resembles breadcrumbs.
Add caster sugar to the mixture.
Measure out milk and heat it slightly in the microwave until lukewarm.
Add lemon juice and vanilla extract to the warm milk and mix.
Create a well in the dry mixture and pour in the milk mixture.
Mix with a fork until combined, then use hands to bring the dough together, ensuring it is not sticky.
Flour the work surface and gently fold the dough over a few times.
Roll out the dough to the desired thickness.
Use a cutter to cut out scones, pressing down without twisting the cutter.
Place the cut scones onto the hot baking sheet.
Crack an egg into a bowl and whisk for an egg wash.
Brush the tops of the scones with the egg wash before baking.
Bake the scones in the oven until golden brown.
Let the scones cool slightly before serving.
