1 small eggplant
1 teaspoon salt
1/2 cup red onions, diced
1/2 cup bell pepper, diced
2 cups chopped spinach
1 teaspoon garlic powder
1 teaspoon onion powder
1/2 cup sour cream
1/4 cup mayonnaise
1/2 cup parmesan cheese
1/2 cup grated mozzarella
1/2 cup Monterey Jack cheese
1/2 cup Kobe cheese

Wash the small eggplant and soak it in salt water for about an hour to remove bitterness.

Rinse the eggplant to remove excess salt water and drain on paper towels.
