- 5In a baking dish, spread a layer of tomato sauce on the bottom.
- 6Layer half of the sautéed artichokes over the sauce, followed by a layer of mozzarella cheese and a sprinkle of parmesan cheese.
- 7Repeat the layering process with the remaining artichokes, tomato sauce, mozzarella, and parmesan.
- 8Top the final layer with breadcrumbs and a drizzle of olive oil for a crispy finish.
- 9Preheat the oven to 375°F (190°C).
- 10Bake the dish for 25-30 minutes, or until the top is golden and bubbly.
- 11Let it cool for a few minutes before slicing and serving, garnished with fresh basil.

- 5Add the chanterelle mushrooms and sauté until they are tender, about 5-7 minutes.
- 6Add the Arborio rice to the skillet and stir to coat the grains with the oil and butter, cooking for about 2 minutes.
- 7Pour in the white wine and stir until it is mostly absorbed by the rice.
- 8Begin adding the warm vegetable broth, one ladle at a time, stirring frequently. Wait until the liquid is mostly absorbed before adding the next ladle.
- 9Continue this process until the rice is creamy and al dente, about 18-20 minutes.
- 10Remove from heat and stir in the remaining butter and grated Parmesan cheese. Season with salt and black pepper to taste.
- 11Serve hot, garnished with fresh parsley.
