2 tablespoons of plain flour
1 teaspoon of cumin powder
2 teaspoons of finely chopped parsley
2 crushed cloves of garlic
3 tablespoons of olive oil

Heat 3 tablespoons of olive oil in a pan.

Sauté the onions and garlic for 3 to 5 minutes.

Add in the spring onions, mushrooms, and cumin powder; mix well and cook on medium-low heat for about 5 minutes.

In a bowl, mash the pinto beans with a potato masher or food processor.

After 5 minutes, add the flour to the mushroom mixture and cook for a further minute, then turn off the heat.

Add the onion mix to the mashed beans together with the parsley and mix well, seasoning with salt and pepper.

Form the mixture into 3 patties.

Heat about 1/4 inch of vegetable oil in a pan until quite hot.

Slide the patties into the pan and cook for about 5 minutes, then carefully turn them over and cook for another 5 minutes before removing.
