Black Bean Vegan Burgers

1 can (15 oz) black beans, drained and rinsed
1/2 cup breadcrumbs
1/4 cup finely chopped onion
1/4 cup finely chopped bell pepper
2 cloves garlic, minced
1 tsp cumin
1/2 tsp chili powder
1/2 tsp salt
1/4 tsp black pepper
1 tbsp olive oil
1 tbsp soy sauce
1 tbsp lime juice
1/4 cup chopped fresh cilantro

Preheat your oven to 375°F (190°C).

In a large bowl, mash the black beans with a fork or potato masher until mostly smooth, leaving some chunks for texture.

Add the breadcrumbs, chopped onion, bell pepper, garlic, cumin, chili powder, salt, black pepper, olive oil, soy sauce, lime juice, and cilantro to the mashed beans. Mix until well combined.

Form the mixture into patties, about 1/2 inch thick.

Place the patties on a baking sheet lined with parchment paper.

Bake in the preheated oven for 20-25 minutes, flipping halfway through, until the burgers are firm and slightly crispy on the outside.
