Instructions
- 1Soak red beans overnight in water, then drain.
- 2Heat olive oil in a skillet over medium heat and sauté onion, bell pepper, and celery until softened, about 5-7 minutes.
- 3Add garlic and cook until fragrant, about 1 minute.
- 4Transfer sautéed vegetables to the crockpot.
- 5Add soaked beans, smoked sausage, bay leaves, thyme, cayenne pepper, black pepper, and salt to the crockpot.
- 6Pour in chicken broth and stir to combine all ingredients.
- 7Cover and cook on low for 6-8 hours or high for 3-4 hours until beans are tender.
- 8Once cooked, remove bay leaves and adjust seasoning if necessary.
- 9Prepare rice according to package instructions.
- 10Serve red beans over rice, garnished with parsley and sliced green onions.

- ●24 oz marinara sauce
- ●15 oz ricotta cheese
- ●2 cups shredded mozzarella cheese
- ●1/2 cup grated Parmesan cheese
- ●1 egg
- ●1 tsp Italian seasoning
- ●1/2 tsp salt
- ●1/4 tsp black pepper
Instructions
- 1In a skillet, brown the ground beef with chopped onion and minced garlic over medium heat until fully cooked. Drain excess fat.
- 2In a bowl, mix ricotta cheese, egg, Italian seasoning, salt, and black pepper until well combined.
- 3Spread a thin layer of marinara sauce on the bottom of the crockpot.
- 4Layer 3 lasagna noodles over the sauce, breaking them to fit if necessary.
- 5Spread half of the ricotta mixture over the noodles, followed by a layer of ground beef, and then a layer of marinara sauce.
- 6Sprinkle 1/3 of the mozzarella cheese over the sauce.
- 7Repeat the layers: noodles, ricotta mixture, ground beef, marinara sauce, and mozzarella cheese.
- 8For the final layer, place the last 3 noodles on top, cover with remaining marinara sauce, and sprinkle with remaining mozzarella and Parmesan cheese.
- 9Cover the crockpot and cook on low for 4-6 hours or until the noodles are tender and the cheese is melted.
- 10Let the lasagna sit for 10-15 minutes before serving to allow it to set.

- ●1 can (10 oz) diced tomatoes with green chilies
- ●1 packet (1 oz) taco seasoning
- ●1 cup chicken broth
- ●8 oz cream cheese, cubed
- ●1 cup shredded cheddar cheese
- ●1/2 cup chopped onion
- ●1/2 cup chopped bell pepper
- ●1 tsp garlic powder
- ●1 tsp cumin
- ●1/2 tsp salt
- ●1/2 tsp black pepper
Instructions
- 1Place the chicken breasts in the bottom of the crockpot.
- 2Add the black beans, corn, diced tomatoes with green chilies, onion, and bell pepper on top of the chicken.
- 3Sprinkle the taco seasoning, garlic powder, cumin, salt, and black pepper over the mixture.
- 4Pour the chicken broth over all the ingredients in the crockpot.
- 5Cover and cook on low for 6-8 hours or on high for 3-4 hours until the chicken is cooked through.
- 6Once cooked, shred the chicken using two forks and stir it back into the chili.
- 7Add the cubed cream cheese and shredded cheddar cheese to the crockpot, stirring until melted and well combined.
- 8Taste and adjust seasoning if necessary, then serve hot.
