Instructions

  1. 1Soak red beans overnight in water, then drain.

  3. 3Add garlic and cook until fragrant, about 1 minute.
  4. 4Transfer sautéed vegetables to the crockpot.
  5. 5Add soaked beans, smoked sausage, bay leaves, thyme, cayenne pepper, black pepper, and salt to the crockpot.

  • 9 lasagna noodles
  • 1 lb ground beef
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 24 oz marinara sauce
  • 15 oz ricotta cheese
  • 2 cups shredded mozzarella cheese
  • 1/2 cup grated Parmesan cheese
  • 1 egg
  • 1 tsp Italian seasoning
  • 1/2 tsp salt
  • 1/4 tsp black pepper

Instructions

  1. 1In a skillet, brown the ground beef with chopped onion and minced garlic over medium heat until fully cooked. Drain excess fat.
  2. 2In a bowl, mix ricotta cheese, egg, Italian seasoning, salt, and black pepper until well combined.
  3. 3Spread a thin layer of marinara sauce on the bottom of the crockpot.
  4. 4Layer 3 lasagna noodles over the sauce, breaking them to fit if necessary.
  5. 5Spread half of the ricotta mixture over the noodles, followed by a layer of ground beef, and then a layer of marinara sauce.
  6. 6Sprinkle 1/3 of the mozzarella cheese over the sauce.
  7. 7Repeat the layers: noodles, ricotta mixture, ground beef, marinara sauce, and mozzarella cheese.
  8. 8For the final layer, place the last 3 noodles on top, cover with remaining marinara sauce, and sprinkle with remaining mozzarella and Parmesan cheese.

  2. 2Add the black beans, corn, diced tomatoes with green chilies, onion, and bell pepper on top of the chicken.
  3. 3Sprinkle the taco seasoning, garlic powder, cumin, salt, and black pepper over the mixture.
  4. 4Pour the chicken broth over all the ingredients in the crockpot.
  5. 5Cover and cook on low for 6-8 hours or on high for 3-4 hours until the chicken is cooked through.
  6. 6Once cooked, shred the chicken using two forks and stir it back into the chili.
  7. 7Add the cubed cream cheese and shredded cheddar cheese to the crockpot, stirring until melted and well combined.
  8. 8Taste and adjust seasoning if necessary, then serve hot.
