1

Boil a large pot of water with a 3 to 1 ratio of water to noodles.

2

Once the water is at a full boil, add the noodles in small bunches to prevent them from balling up.

3

Blanch the noodles for about 2 to 3 minutes, lifting them instead of stirring to avoid breaking them.

4

Remove the noodles from the pot and run them under cold water to stop the cooking process.

5

Wring out the noodles and spread them out on a baking sheet lined with paper towels to dry them well.

6

Heat a pan or wok over medium-high heat and add oil.

7

Once the oil is hot, add minced garlic and stir until golden brown.

8

Add chopped pork and cook until fully browned, about 3 minutes, seasoning lightly with salt.

9

Add shrimp (shell on or off as preferred) and cook until fully cooked through and orange in color.

10

Add Tiriyama cabbage and optional carrots, cooking for about a minute.

11

Season the mixture with shoyu and a couple splashes of oyster sauce, stirring to combine.

12

Add the cooked noodles to the pan, using two wooden spoons to fold everything together from the bottom without stirring.

13

Turn on the fire and add chopped green onions on top, folding them in.

14

Optionally add roasted garlic for extra flavor and taste to adjust seasoning.
