Prepare to make cheesecake bites that are suitable for the carnivore diet with no crust or sugar.
Measure out 200 g of full fat cream cheese; avoid using light cream cheese as it won't set properly.
Add 1 egg to the cream cheese; you can use just the yolk for a denser bite, but the whole egg is used for extra lift.
Take 30 g of butter straight from the fridge and sprinkle a pinch of salt over it.
To soften the butter, use the warm water glass trick: boil water, pour it into a glass, let it heat for a minute, then tip it out and place the glass upside down over the butter for a few minutes.
Grease six silicone cupcake molds with the softened butter, ensuring to cover the corners and sides well to prevent sticking.
In a small bowl, combine the softened cream cheese, the egg, and the softened butter; mix thoroughly with a fork until smooth and creamy, ensuring no lumps remain.
Spoon just under two tablespoons of the batter into each greased cupcake mold, leaving them slightly uneven for character.
Slide the basket into the air fryer and set it to 160° C for 13 minutes; monitor towards the end for a set top with a slight jiggle in the middle.
After cooking, let the cheesecake bites rest in the warm air fryer basket for a few minutes to firm up without overbaking.
Transfer the molds to a plate and let them cool on the counter for about 10 minutes before refrigerating.
For best results, chill the cheesecake bites in the fridge for at least 2 to 3 hours before serving; they are better cold but can be tasted warm if desired.
