Preheat the oven to 400°F (200°C).
Parboil the potatoes and onions until softened.
Prepare garlic-infused olive oil with sliced garlic, salt, and pepper.
Season the fish with salt and stuff it with thyme and garlic cloves.
Oil the fish using the garlic-infused olive oil and season the vegetables with salt.
Place the parboiled potatoes and onions in a baking pan and add the seasoned fish on top.
Add quartered plum tomatoes around the fish.
Drizzle more garlic-infused olive oil over the fish and vegetables.
Bake in the oven for 20 minutes.
After 20 minutes, sprinkle seasoned breadcrumbs on top of the fish and vegetables and return to the oven for another 5 minutes until the breadcrumbs are crispy.
Remove the fish from the oven and let it rest for a few minutes before serving.
Make a sauce with leftover garlic and oil, adding lemon juice and parsley.
Plate the fish with the vegetables and drizzle the sauce on top.
