Melt 1/2 cup of vegan butter and 1/4 cup of chocolate chips in the microwave for about 1 minute.
Stir the melted mixture and add 1/4 cup of granulated sugar to it while warm to create a shiny top on the brownies.
Add 1/4 cup of applesauce as an egg replacer to the melted mixture and stir until combined.
In a separate bowl, mix together 1 cup of all-purpose flour, the remaining sugar, 2 teaspoons of ground flax, 1 tablespoon of corn starch, 1/4 teaspoon of baking powder, 1/4 teaspoon of salt, and 1/4 cup of cocoa powder.
Stir the dry ingredients together until well combined.
Combine the wet and dry ingredients, stirring gently until just mixed together.
Prepare an 8x8 inch or small rectangular baking pan lined with parchment paper and lightly oiled.
Spread the brownie batter into the prepared pan, ensuring it's evenly distributed to the corners.
Add 1/4 cup of chocolate chips (optional) to the batter and gently fold them in.
Preheat the oven to 350°F (175°C).
Bake the brownies for 25 to 30 minutes, checking for doneness based on the size and color of the pan.
Let the brownies cool in the pan for a while, then transfer them to the fridge for about an hour to chill before slicing.
