Add butter to a cooking pot and let it melt.

Add finely chopped white onion and let this cook for 15 minutes on low heat.

Add the flour to the butter and onion and stir this till it starts to smell a little bit toasted. The color should be very light brown.

Add the heavy cream to the milk and mix this.

Add bit by bit the milk mixture to the pan while stirring so you don't get lumps.

Grate the parmesan and add this to the mixture together with shredded chicken, salt, black pepper and grated nutmeg. Mix this for 5 minutes.

Add this to a large square plate that fits in the fridge. Let it cool down overnight.

Heat up your frying oil to 180โ„ƒ.

Add on three different plates, flour, mixed egg and bread crumbs.

Take a little bit of croquette mixture in your hand and roll this in the shape that you prefer.

Add this first to the flour, after that to the egg mixture and as last to the breadcrumbs. Fry this for 4 minutes.
