Add 1/2 cup of granulated sugar, 1/4 cup of cold water, and 1 teaspoon of fresh lemon juice into a small fry pan.
Heat over medium heat for 6 to 8 minutes to make caramel sauce without stirring.
Evenly distribute the caramel sauce into four individual flan molds.
Measure out 1 3/4 cups of milk and add 1 teaspoon of vanilla extract, mixing well.
Crack 4 eggs into a large bowl and whisk them together.
Slowly add in 1/2 cup of granulated sugar while whisking continuously.
Gradually add the milk mixture to the egg mixture while mixing continuously.
Run the mixture through a sieve into a pitcher to remove excess egg.
Distribute the mixture into the flan molds and place them in a casserole dish with cold water halfway up the molds.
Bake in a preheated oven at 175°C (350°F) for 45 minutes.
Remove from the oven and let cool for a couple of minutes before refrigerating for at least 4 hours.
For the rice pudding, add 4 cups of milk, 1 cinnamon stick, 1 vanilla bean, and lemon peels from half a lemon into a large fry pan and heat until just below boiling.
Add 1/2 cup of Spanish round rice and stir every 30 to 60 seconds.
After 10 minutes, lower the heat and add 1/2 cup of granulated sugar, mixing continuously.
Cook for about 15 minutes until thickened, then transfer to shallow bowls and top with cinnamon powder and fresh lemon zest.
