Take 2 pounds of mild Italian pork sausage out of the casing.

Dice 1.5 cups of mild cured ham into small pieces.

In a medium frying pan over medium heat, sauté the sausage meat for about 5-6 minutes until browned lightly.

Prepare the savoy cabbage by cutting out the core about 2-2.5 inches deep and discarding any tough outer leaves.

Boil water in a large pot and drop in the cabbage leaves for 3-4 minutes until pliable.

Remove the leaves and set aside to cool.

Render 2 tablespoons of pork fat in a frying pan and add diced onion and carrot to cook until tender.

Prepare 10-12 slices of lean salt pork, approximately 4 by 1.5 inches and 3/8 inch thick, to use in the dish.

Stuff each cabbage leaf with the filling and roll tightly, tucking in the sides.

Arrange the stuffed cabbage rolls in a baking dish, seam side down, and layer with the salt pork slices.
