Grilled Chicken Caesar Salad

4 small garlic cloves, minced
1 teaspoon anchovy paste
freshly squeezed lemon juice, from one small lemon
1 tablespoon Dijon mustard
1 cup mayonnaise
1 tablespoon Worcestershire sauce
1/2 cup freshly grated Parmigiano-Reggiano
1/2 teaspoon salt
1/2 teaspoon freshly ground black pepper
2-4 Chicken Breasts
4 tablespoons butter
1/4 cup blackening seasoning

For the dressing: Add all ingredients to a food processor and pulse until smooth.

Melt 4 tablespoons of butter in a bowl, add 1/4 cup of blackening seasoning and mix well.

Coat the chicken breasts in the melted butter / blackening seasoning mixture and let sit for 10-20 minutes.

In a cast iron skillet, add 1 tablespoon of butter and cook chicken on both sides for 7 minutes, or until completely cooked. Set aside.

In a large bowl, add clean chopped kale, fresh apples, asparagus, parmesan cheese, and chicken. Coat with caesar dressing and enjoy!
