Peel, core, and quarter the pears.

Stir in vanilla extract, cinnamon, and a pinch of salt.
Arrange the pear quarters in the caramel, cut side up.
Cook the pears for 5-10 minutes until they soften slightly.
Remove from heat and drizzle with lemon juice.
Cover the pears with puff pastry, tucking the edges in.
Bake in the preheated oven for 25-30 minutes, until golden brown.
Let cool for 5 minutes before inverting onto a serving plate.
Serve warm, optionally with whipped cream or ice cream.
