Add 2 teaspoons of sugar to 1 cup of warm water and mix until dissolved.
Add 2 tablespoons of dry yeast to the sugar water and stir, then let it activate for 10-15 minutes.
In a bowl, combine 2 cups of rolled oats with 3 cups of boiling water and let it sit for about 20 minutes, stirring frequently.
Preheat the oven to 170°F for proofing the bread.
After 20 minutes, add 2/3 cup of molasses, the activated yeast mixture, and 4 teaspoons of salt to the oats and mix well.
Gradually add 7 to 7.5 cups of all-purpose flour, mixing until a dough forms.
Knead the dough for about 8-9 minutes, adding flour as needed to prevent sticking.
Place the dough in a greased bowl, cover with cellophane, and let it proof for about 2 hours.
After proofing, divide the dough into four pieces and shape them into balls.
Vacuum seal two of the dough balls for freezing.
Grease two loaf pans and shape the remaining dough into loaves, placing them in the pans.
Let the loaves proof in the warm oven for about 1 hour.
Preheat the oven to 400°F and bake the loaves for 30-35 minutes.
Cool the loaves on a wire rack before slicing.
